Braised Chicken Feet In Soya Sauce

Mum's Recipe

This is my mum's number one dish. Chicken feet contains a whole lot of collagen that will improve our skin elasticity. If you are not used to chicken feet, you can replace it with the chicken mid-wings.

Ingredients :-

- 600g of fresh chicken feet

- half clove of garlic

- 5 to 7 tablespoons of Good grade soya sauce (I prefer to use Kikkoman's brand)

- 1 teaspoon of dark soya sauce

- 3 tablespoons of white sesame oil

- 1 capful Hua Tiao Wine (Chinese Wine)

- a dash of pepper

- 2 star anise and little flower pepper (optional, put this in if you like spices)

- vegetable or olive oil

- 2 teaspoons of sugar

Method:-

1. Peel off the garlic skin, use a chopper to compress it flat

2. Wash the chicken feet with salt to thoroughly clean it.

3. Heat the wok till the oil is boiling.

4. Fry the chicken feet with the garlic and spices (optional) till there is a aroma.

5. Pour in the soya sauces, sesame oil, Hua Tiao Wine, pepper and sugar. Continue frying for a short while and then add some water to submerge the chicken feet.

6. Leave the gravy to boil slowly with the chicken feet until the gravy is one-third of the chicken feet. Leave it to boil slowly for at least half an hour. The chicken feet will be infused with the gravy.

7. Serve hot.

I feel that Chinese cooking is mainly based on feeling. It will depend if you like your food more saltish or bland. Adjust your level of salt (and soya sauce) according to your taste.
