Healthy Cantonese Soup

Black beans contains high protein, manganese and folate plus many other vitamins and minerals. In Chinese soups, black beans can regulate the blood, in other words, it can give warmth to your body when consumed. This soup is great especially for women who have just given birth. Excellent soup for everybody!

This is one of my favorite soups and is very easy to prepare. Serves 4.

Ingredients:-

- 3/4 of a porcelain rice bowl of black beans

- 600g of pork ribs

- a handful of Wolfberry seeds (Gou Zi)

- 5 big bowls of water (each big bowl approx equates to 3 small rice bowls)

- salt to taste

Method:-

1. Put water to boil.

2. Scald the pork ribs. Discard the water.

3. Put all the ingredients in the pot.

4. Boil for at least 2 hours.

5. Add salt to taste.

6. Serve hot.

Please note that soups boil in aluminium pots and clay pots taste slightly different. Soups boil in clay pots taste much nicer. In addition, soups taste nice if you use a porcelain spoon instead of a aluminium spoon. Try it to taste the difference!

**Important! All meats must be scald as they still contain some stale blood in their bodies. If the meat is not scald properly, your soup will have a very slight "bloody" taste. So please scald all meats if you are using them to boil soups.
